Recipe: Stuffed Apples with Quinoa and Pomegranate

- 4 medium apples (any variety suitable for baking)

- Fresh parsley (for garnish)
- 1/2 teaspoon cinnamon

INSTRUCTIONS:
- Prepare the Quinoa:
- Rinse the quinoa thoroughly under cold water.
- In a medium-sized pot, combine quinoa with 2 cups of water (or vegetable broth for extra flavor). Bring to a boil, then reduce to a simmer and cook for 15 minutes, or until the quinoa is tender and the water is absorbed. Fluff with a fork.
- Prepare the Apples:
- Preheat the oven to 375°F (190°C).
