Instructions:

  1. Activate yeast
    • In a large bowl, whisk warm water, yeast, and sugar.
    • Let sit for 5–10 minutes until foamy.
  2. Mix dough
    • Stir in flour, salt, olive oil, rosemary, and garlic.
    • Mix until you get a sticky dough (gluten-free dough will look wetter than wheat dough).
  3. First rise
    • Cover bowl with plastic wrap or a towel.
    • Let rest at room temperature for 1–2 hours, until doubled in size.
