  1. Prepare the crust — Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, sugar, and cinnamon. Stir in the melted butter until the mixture is evenly moistened.   4. Prepare the cherry topping — If you’re using fresh cherries, pit and chop them. Combine the cherries with sugar in a small saucepan, and heat over medium until the mixture begins to simmer. Add cornstarch and stir until thickened, then remove from heat. Allow the mixture to cool.
  5. Top the cheesecake — Once the cheesecake bars are fully cooled, spread the cherry topping evenly over the top.
