Hearty Vegetable Bean Soup
Ingredients
- 2 tbsp olive oil
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 2 carrots (sliced)
- 1–2 celery sticks (sliced)
- 1 red bell pepper (diced)
- 200 g mushrooms (sliced)
- 1 can white beans (drained & rinsed)
- 1 can crushed tomatoes (or 3 fresh tomatoes chopped)
- 1 tsp paprika
- 1 tsp black pepper
- 1 tsp dried oregano (or Italian herbs)
- 1 vegetable stock cube (or 1 liter vegetable broth)
- 2 handfuls fresh spinach
- Salt to taste
- Optional: grated Parmesan for serving
Instructions
1. Sauté the vegetables
- Heat olive oil in a pot.
- Add chopped onion and sauté until soft.
- Add garlic, carrot, celery, and bell pepper.
- Cook for 3–4 minutes.
2. Add mushrooms
- Add sliced mushrooms.
- Sauté until they release their water and soften.
3. Add beans & tomato base

4. Add broth
