Hearty Vegetable and White Bean Soup

Hearty Vegetable Bean Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 2 carrots (sliced)
  • 1–2 celery sticks (sliced)
  • 1 red bell pepper (diced)
  • 200 g mushrooms (sliced)
  • 1 can white beans (drained & rinsed)
  • 1 can crushed tomatoes (or 3 fresh tomatoes chopped)
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp dried oregano (or Italian herbs)
  • 1 vegetable stock cube (or 1 liter vegetable broth)
  • 2 handfuls fresh spinach
  • Salt to taste
  • Optional: grated Parmesan for serving

Instructions

1. Sauté the vegetables

  1. Heat olive oil in a pot.
  2. Add chopped onion and sauté until soft.
  3. Add garlic, carrot, celery, and bell pepper.
  4. Cook for 3–4 minutes.

2. Add mushrooms

  1. Add sliced mushrooms.
  2. Sauté until they release their water and soften.

3. Add beans & tomato base

  1. Pour in the crushed tomatoes.
  2. Add the white beans.
  3. Mix in paprika, black pepper, oregano, and salt.

4. Add broth

  1. Add 1 liter of vegetable broth (or water + stock cube).
  2. Bring to a boil, then reduce the heat.
  3. Cover and simmer for 15–20 minutes until vegetables are tender.

5. Add fresh spinach

  1. Add fresh spinach on top.
  2. Let it wilt for 2–3 minutes.

6. Serve

Ladle into bowls and top with:
