INGREDIENTS:

- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 egg, beaten (for egg wash)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon sesame seeds(optional, for topping)
INSTRUCTIONS:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Prepare the filling:
- Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, cooking until softened (about 3-4 minutes).
- Add the chopped spinach to the pan and cook until wilted, around 2-3 minutes. Remove from heat and let it cool slightly.
- In a bowl, mix the ricotta, mozzarella, and Parmesan cheese. Add the cooled spinach mixture, salt, and pepper. Stir until well combined.
- Assemble the pastry:
